Easy Baked Chicken and Rice for a family of two



When cooking for a small family, it can be challenging to find the perfect recipe that accommodates for a smaller serving size. That's why I'm excited to share with you one of my favorite dishes: baked chicken with a side of rice! This meal is not only delicious and healthy, but it's easy to make and perfect for families of two. Recipe:

2 Chicken breasts or 4 chicken thighs (I prefer the dark meat of the thighs)

1 egg or 1/4 cup mayonnaise or 1/4 cup unflavored yogurt

Salt and Pepper

Crushed Ritz Crackers


1. Start with the Chicken: Preheat the oven to 400 degrees. Prepare a baking dish by spraying it with non-stick cooking spray. Then, take the skinless chicken breasts or thighs and pat them dry with a paper towel. In a small bowl, have a beaten egg or mayonnaise or yogurt to roll your chicken pieces in. Then in another bowl, have crushed ritz crackers ready to roll the coated chicken. Place the coated chicken in the baking dish and season both sides of the chicken with salt, pepper, and any other seasoning of your choice. Place the pan in the oven to start baking.


2. Prepare the Rice: While the chicken is baking, prepare the rice by following the instructions on the package. I recommend using brown rice for a healthier option, but white rice will work just as well. Once the rice is finished, set it aside until the chicken is done.


3. Bake the Chicken: Place the baking dish with the chicken in the preheated oven and bake for about 25-30 minutes, or until the internal temperature of the chicken reaches 165 degrees Fahrenheit. To ensure even cooking, you can flip the chicken halfway through the cooking process.


4. Final Touches: Once the chicken is fully cooked, remove it from the oven and let it rest for a few minutes. This allows the juices to redistribute and keeps the chicken moist. Serve the chicken with a side of rice and any other vegetables or bread that you desire.
